Francesco Guarracino, star chef at King Street West’s chic new dining hit San Carlo Cicchetti has created a special, delicate yet decadent dish that’s sure to be a hit with star-crossed lovers or foodies this Valentine’s Day.
A popular Italian Valentine’s Day dish given a sexy French twist, San Carlo Cicchetti’s langoustine and champagne risotto is lovingly crafted and elegantly garnished with edible gold leaf for that extra touch of decadence.
The son of a two-star Michelin chef, Francesco’s skill and passion for Italian dining were crafted in Milan under renowned Italian chef Gualtiero Marchesi, considered to be the founder of modern Italian cuisine. It was Marchesi himself that first taught Francesco to create the champagne and langoustine risotto.
Perfect for Valentine’s Day or a special occasion, Francesco says the pleasure of this dish really is in the eating.
“It takes great care and passion to make this dish as it should be,” he says. “The two notes of the langoustine stock and the champagne must balance and compliment precisely and the risotto must be cooked to perfection. What results is a beautiful, elegant taste experience, the bubbly texture and taste of the champagne first and then the sweetness of the langoustine follows. Enjoyed with a glass of prosecco or champagne, it’s the perfect Valentine’s dish.”
Winner of the Italian Federation of Chefs’ ‘Best Chef Under 40,’ Francesco went on to become a member of the Italian Michelin team and is now flourishing at the helm of Manchester’s high-profile San Carlo restaurants.
This special full-size dish will be available from February 11-15 and retails at just £11.95.
Limited reservations are available at San Carlo Cicchetti for Valentine Day dining through to 11pm on the 14th February when there will also be live music from a concert harpist.
